TAMMY'S
STUFFED CHICKEN
Stuffed chicken for three.

INGREDIENTS:
3 chicken breasts
2½ cups of finely chopped mushroom
1 jar of chopped sun-dried tomatoes
1 cup of chopped bacon
2 cups of mashed feta cheese

Bacon slices to cover the stuffed chicken breasts.
A few extra chopped mushrooms to place around the chicken breasts in the baking tray.

INSTRUCTIONS:
Mix all ingredients in a large mixing bowl (Except the bacon slices and the extra chopped mushrooms).
​
Place a sheet of baking paper in the bottom of the baking dish.
​
Cut the chicken breasts almost in half, lengthwise.
​
Place the chicken breasts on top of the baking paper in the baking dish.
​
Fill chicken breasts generously with the stuffing.
​
Cover each chicken breast completely with the sliced bacon, making sure to completely cover the chicken all the way around the sides right down to the baking dish.

Sprinkle any remaining stuffing around the bacon covered chicken breasts, along with the extra chopped mushrooms.
​
Bake at 200°C until done, about 50mins. to 1hr.
​
Drain excess liquid after about 30 to 40 minutes.
​
If the bacon is getting too brown, cover the entire dish with another sheet of baking paper.
​
Can be served with rice.
